

We have just recently gone nut-free in my kids school class room and it now makes me realise how many nuts/nut products they used to eat! Its more of a challenge now and I can’t rely on peanut butter sandwiches if I have nothing else so I have become more prepared. One thing I make loads of is banana bread. I have now omitted the pecans / walnuts so its nut free! I bake it, slice it and freeze it in individual portions in those tiny Ikea food bags. I pop it in their lunch boxes frozen so it keeps everything else cool until lunchtime. Heres my recipe:
250g self raising flour
1/2 teaspoon baking powder
125g butter (at room temperature)
100g light muscovodo sugar
2 medium eggs
3 ripe bananas, mashed
1 teaspoon vanilla extract
required: 2lb loaf tin – lined (unless you use silicone which i do)
